Heat half of the olive oil in a large sauté pan over medium heat. Add the sausage and cook until browned and slightly crispy, about 10 minutes. Remove from the pan and set aside.
Add the remaining olive oil to the pan. Add the bell pepper, celery, onion, and 1 tbsp of Cajun seasoning, and cook until softened, about 5 minutes. Add the garlic and cook for an additional 1–2 minutes, until fragrant.
Add the tomato paste and stir to coat the vegetables. Cook for another 3 minutes. Add the chicken broth and remaining Cajun seasoning, stirring to combine and scraping the bottom of the pan. Let the sauce simmer while the pasta cooks.
Cook Borgatti’s gemelli pasta for 5 minutes. Drain and add to the pan with the sauce. Return the sausage to the pan, add the heavy cream, and stir to combine. Serve and enjoy.
