Red Wine Braised Short Ribs

Ingredients

½ CUP ALL PURPOSE FLOUR
1 ½ LB BONELESS SHORT RIBS
3 TBSP OLIVE OIL
1 LARGE SWEET ONION, DICED FINELY
1 CUP FINELY CHOPPED CARROT
½ CUP FINELY CHOPPED CELERY
3 GARLIC CLOVES, MINCED
2 TBSP TOMATO PASTE
¼ TSP DRIED ROSEMARY
2 TSP DRIED THYME
6 OZ BEEF DEMI-GLACE
1 CUP RED WINE
1 BAY LEAF
1 Parmesan rind
BUTTER FOR TOSSING PASTA IN
SALT AND PEPPER TO TASTE
1 LB BORGATTI’S PAPPARDELLE

Preparation

1:

Season the flour with salt and pepper. Coat the ribs in the seasoned flour. Sear the ribs on all sides until brown, approximately 3–4 minutes per side. Remove the ribs and drain off any excess beef fat from the pot.

2:

Add the olive oil, vegetables, and garlic to the pot. Sauté for about 5 minutes until the vegetables are soft. Stir in the tomato paste and cook for an additional 2 minutes, mixing well. Add the dried herbs to the pot and season with salt and pepper. Continue cooking for another 2 minutes.

3:

Pour the demi-glace into the pot to deglaze, stirring until it melts. Return the meat and any accumulated juices to the pot. Cover the ribs with the red wine, and add the bay leaf and Parmesan rind. Bring the pot back to a simmer, which should take about 3–4 minutes.

4:

Place the lid on the pot and transfer it to a 350-degree oven. Cook for 2 hours.

5:

Boil the pappardelle for 3–5 minutes. Drain the pasta and toss in butter to prevent sticking.

6:

Serve the short ribs on top of the buttered pappardelle.
