Crack the eggs into a large bowl and whisk to combine. Add the cheese and mix. Season with salt and pepper, then set aside.
Boil Borgatti’s spaghetti for 5 minutes. Drain and rinse with cold water until cooled off.
Add the pasta to the egg and cheese mixture. Toss until every noodle is coated.
Heat a 10-inch pan over medium heat. Add butter and olive oil. Once the butter has melted, add the pasta mixture. Flatten it into an even layer and place the lid on top. Cook for 15 minutes over medium-low heat.
Loosen around the side of the pie with a spatula. Place your lid back on top of the pan and flip so that the pie is resting on the lid. Carefully slide the pie back into the pan and cook for an additional 15 minutes.
Once finished cooking, transfer the pie to a plate. Let it sit and rest for 5 minutes. Cut into 8 pieces and serve.
